Lamb Fillet With Anchovy and Mint

  • 8 sprigs mint
  • 50g anchovy fillets, drained but not washed.
  • 4 tbsp olive oil
  • 4 cloves garlic

Whizz this together in blender.

Marinade lamb in this mixture covered in clingfilm for 1-2 hours.

Roast lamb for 15-18 mins gas 7.

Serve with new potatoes. I also served with baby leaf spinach.

  1. Forgot to mention that you also need a couple of lamb fillets, preferably totalling around 350g!
