- 8 sprigs mint
- 50g anchovy fillets, drained but not washed.
- 4 tbsp olive oil
- 4 cloves garlic
Whizz this together in blender.
Marinade lamb in this mixture covered in clingfilm for 1-2 hours.
Roast lamb for 15-18 mins gas 7.
Serve with new potatoes. I also served with baby leaf spinach.
Forgot to mention that you also need a couple of lamb fillets, preferably totalling around 350g!
